Low FODMAP Recipe - Sesame Cookies



Ingredients

1 ¼ cups Buckwheat flour

¼ teaspoon celtic sea salt

½ teaspoon baking soda

⅓ cup maple syrup

⅓ cup tahini (roasted will give more flavor)

1 tablespoon grapeseed oil or vegan shortening

1 tablespoon vanilla extract

¼ cup sesame seeds (hulled or unhulled -I used hulled)


Method

  1. In a large bowl, combine buckwheat flour, salt and baking soda
  2. In a smaller bowl, blend together maple syrup, tahini, oil and vanilla
  3. Blend the dry ingredients into the wet
  4. Form the dough into 1 inch balls and roll in the sesame seeds
  5. Place on a parchment paper lined baking sheet and flatten
  6. Bake at 350° for 8-10 minutes until lightly brown
  7. Cool on baking sheet
  8. Serve
  9. Makes 14 cookies

170°C/Fan150°F/325°F/Gas 3
