1tbsp sunflower oil
500g (1lb 2oz) lean pork mince
1tbsp fish sauce
Zest and juice of 1 lime, plus lime wedges to garnish
1-2 red chillies, deseeded and finely chopped
½tbsp soft brown sugar
Large handful each fresh coriander and mint leaves, roughly chopped
2 little gem lettuces, leaves separated
1 Heat the oil in a wok or frying pan. Add pork and cook over high heat for 5-8min until browned and cooked through. Set aside.
2 In a large serving bowl, mix together the fish sauce, lime zest and juice, chillies, brown sugar . Stir in the pork and most of the coriander and mint. Check the seasoning.
3 Take the pork mixture, lettuce leaves, peanuts, reserved herbs and lime wedges to the table and let people dig in.
