Low FODMAP Recipe - Sticky Toffee Pudding


Ingredients

75 g Stoned Dates

100 ml Boiling Water

1 tsp Bicarbonate of Soda

75 g Butter

1 tsp Cornflour

75 g Brown Sugar

1 Egg

1 tbsp Black Treacle

75 g  Gluten Free Self Raising Flour


Method

Pour the boiling water over the dates, mash and leave to cool.

Smear some butter around the inside of 1lt/2pt oven proof pudding dish.

Dust the cornflour over the buttered dish.

Beat together the butter and brown sugar in a mixing bowl.

Beat in the egg then the  treacle and lastly the flour.

Mash the dates then mix in the bicarbonate of soda and allow to bubble.

Add the frothy dates to the mixing bowl.

Pour the mixture into the dish.

Bake in a pre heated oven for 25 minutes.
